Orzo Salad with Mozzarella

Orzo salad is a quick and easy dish that goes well with a variety of main dishes. It is a great dish to serve on warm summer days with BBQ or seafood. This recipe combines the summer flavors of lemon and red pepper with the tang of the balsamic glaze. Try it with seared scallops or sous vide pork chops. Ingredients

  • 1 Cup Orzo

  • 1/4 Cup Olive Oil

  • 2 Tbs Lemon Juice

  • 1 Tbs Italian Seasoning

  • 2 Cloves Crushed Garlic

  • 1 Tsp Kosher Salt

  • 1 Tsp Fresh Ground Black Pepper

  • 1/2 Tsp Granulated Sugar

  • 4 Tbs Chopped Red Onion

  • 3/4 Cup Chopped Mozzarella

  • 1/2 Cup Chopped Red Pepper

  • 6 Tbs Balsamic Vinegar Glaze

Directions

  • To start mix together oil, lemon juice, Italian seasoning, salt, pepper, sugar and garlic in large mixing bowl.
  • Fill a medium sauce pan 3/4 with water. Add some salt and olive oil. Bring to a boil and cook the orzo for 9 minutes or as directed on package.
  • Drain orzo when complete and transfer to mixing bowl with oil mixture. Toss to coat and allow to cool to room temperature.
  • Mix in chopped red pepper and mozzarella and mix.
  • To finish drizzle balsamic glaze on each served portion

Notes

  • Fresh chopped basil makes a nice garnish and compliments the flavors of this dish.
  • This dish is best served at room temperature. If you store left overs or make this ahead allow it to come to room temperature before serving.
